But I need to do ALL fluids and I've never done brake, power steering etc fluids before - so would be useful to have helping hands/guidance.

lol, just be careful, that ps fluid is under extreme pressure, it will piss out everywhere.

No when your turning the wheel.

Put the hose end inside a 2L coke bottle and tape it around the opening.
