But I need to do ALL fluids and I've never done brake, power steering etc fluids before - so would be useful to have helping hands/guidance.

Brake fluid hasn't been done since I got the car (2 years now? )

Flushing power steering only needs to be done if whats in there is crap. Put the hose end inside a 2L coke bottle and tape it around the opening.
