Overheating

Hey Guys,
I got an FTO as a part payment back in Nov/Dec. When I first went and looked at the car we found an issue where the thermo fans were running continuously therefore the temp was sky rocketing when idling and under heavy accelaration, there was also no water running through the bottom radiator hose it was cold. So the guy I got it off replaced the temp sensors, problem solved worked ace. Up until now. Last two days, I travel about 45kms down the hwy to work, when I'm going down the hwy at 100kmh it sits on its regualr temperature. I get into traffic on my off-ramp and it goes up to about 3/4 and sits there. I get off the off-ramp onto the road and drive again and it goes back down to normal? It's been doing it the last couple of days. I sat it outside on idle when I got home from work today for about 8 mins or so it went a bit over 3/4.
I'e checked fluids and is all OK, water is running through both hoses. Any ideas on what I could check or what the problem is? I'd assume if it was the head it would be using water?
