My turn to ask for a bit of help

I have constant heat coming through my vents now that I have a heater core.
Is this soley controlled by the under dash "air mix damper"?
or
Should there be an in-line valve in the heater hose to stop the flow of coolant through the core, as in older cars?

I would have thought, it was controlled by the heater tap...

The aircon should feed to it, so that when you get to a certain temp it opens, then closes... I have replaced them on Vac Style Air Con, but not on climate control. But I would assume they would be the same...

I would assume you mean air mix damper (motor controlled flap) in the air box, inbetween the evaporator and the heater core to direct air on/off the heater core?
Maybe I didn't plug the harness back in after installing heater core.

Older cars I have had, had an inline vac controlled heater tap on the heater hose.

Fixed today
The air mix damper (door, vent) and the exterior/recirculate damper in the aircon/heater/fan air boxes were not closing/opening all the way.
I disconected the control rods that connect the electric stepper motors to the doors, manually and firmly opened and closed the doors while fan was on high. This cleared any crap that was stopping the closing of the doors. Then I bent the rods a bit to allow the electric stepper motors to pull the doors fully closed/opened.
No more unwanted heat in cab.

If you put a test light on pin 6 of the diagnostic connector with ignition on, you can use a test light to see if the climate control computer has logged any faults.
